Raisin Bread Toasts with Braided String Cheese & Honey

Raisin Bread Toasts with Braided String Cheese & Honey on Diane's Vintage Zest!

Today, I am coming to you with one of my favorite snacks!  I adore bruschetta, crostini, and anything on a mini toast, but this is a sweeter take on the typical flavors that you may be used to.  This "recipe" is super quick, easy, and it actually makes a great little party appetizer as well!

You only need a few ingredients, which may be a little on the unusual side, but they are readily available at most large grocery stores.  In fact tracking down the ingredients may be the hardest part of the entire recipe, because the prep and clean-up take about 5 minutes total.  Not bad for something that tastes so fancy!

Grilled Tilapia with Spicy Mango Pineapple Salsa

Disclosure:  I am a member of the Collective Bias® Social Fabric® Community.  This shop has been compensated as part of a social shopper amplification for Collective Bias.

Guess what?  I have a recipe for you today!  It is one of my favorites, and even though I am in the midst of studying hard, I had this for my birthday dinner at home last weekend.  That meant that I had my family make this for me, so it was even easier to cook than usual.  :)  But really, this is a super simple dish and perfect to take advantage of all of the wonderful produce that I mentioned here on my trip to the new Walmart Neighborhood Market.  Not only is it easy to cook, it looks beautiful and is perfect for a dinner party or a light summer lunch.

I started with a recipe from one of my favorite cookbooks and tweaked it over the years to fit me.  For one thing, I use tilapia, which is a flavorful, budget-friendly fish that you can find easily in the fresh or frozen section.  Also, I substituted some of the herbs since we have some cilantro-senstive people in the family.  Lastly, the original recipe made a pretty small amount of the salsa, but it is so delicious, I find that it ends up being eaten with many more items than just the fish!

Have I whet your appetite enough?  Let's get cooking!!!

My Favorites Lately - Vol. 1 & Changes to the Blog!

Hi everyone!  To get to the fun part of the post, click here!  Otherwise, keep reading to hear about the blog changes coming up...

My Favorites Lately - Vol. 1 on Diane's Vintage Zest!

Temporary Blog Changes...

Besides the exciting changes with Do Tell Tuesday, there are going to a few temporary changes here.  Loyal readers will notice that I have a sort of schedule around here:

Well, I mentioned back in August about a big exam that I was going to study for, and that meant that I would have to scale back my 5 posts a week to probably less.  Ironically, I started to post all seven days a week as you can tell!  Well, I ended up having to postpone my test, and now it's finally time to study for the exam.

Basically, for the next 7 weeks, I probably won't be spending time coming up with as many new recipes to share.  Yes, I will most likely be eating lots of my tried-and-true recipes, like my fave Breakfast Sandwich, Caprese Salad, Fish Tacos, and Ricotta & Fruit Bowl over the next few weeks, and not whipping out new ones.  Also, I won't have as many Wednesday crafts, although I have a few in the backlog to share.  And those Weekly Wrap-Ups take a long time to write about, so those may be out for a few weeks.

However, Do Tell Tuesday, the Blogging 101 Series, Shop Small Saturday Showcase, and Sunday Synopsis will definitely be intact!  To recap, since I have less time to cook and create, Mondays & Wednesdays may be spotty over the next couple of weeks.  We'll see!

Since I don't have a recipe for you today, I wanted to share a few favorites of mine lately, some of which you might like!

Simple Peanut Butter Banana Bites: 2 ways!

Are you ready for easiest "recipe" ever?  I make this little nuggets all the time for my niece and I thought it would be a fun little snack idea that we like to share.  I used to work at a children's clinic that focused on healthy eating choices and exercise, so all day long I was talking about food!  You can see how this might be a problem for a foodie like me.  :)

Anyways, we would frequently need to suggest quick, healthy, kid-friendly breakfasts and snacks because that was a popular parent question.  One of the favorites was 100% whole wheat toast topped with peanut butter and banana.  Fast, simple, and filling.  :)  In fact, it became one of my "go-to breakfasts" on busy mornings!

However, nowadays I do not buy sliced bread as much (my carb of choice is pasta), but I missed my old favorite.  Then, I came up with a cute idea that is a good snack for kids and adults alike.  Here are my Simple Peanut Butter Banana Bites!

Are you ready for the hardest recipe ever?  Just kidding!  It is super simple, but check out my secret ingredient below.  :)

Red Pepper Spread with Roasted Eggplant & Garlic

Today, I am sharing one of my new favorite recipes!  I love this recipe for a couple of reasons: it is a creamy, delicious spread that is wonderful on sandwiches, as a dip for flatbread or veggies, or even over pasta or chicken!  Although it is a tasty addition to nearly every dish and tastes decadent, it is completely healthy, made with only vegetables.  Not only is it delicious and nutritious, it is super easy and requires very little effort.  That's a winning recipe in my book!

Oh, and for those of you who think that you dislike eggplant (like my man), this recipe will convert you.

After the recipe, you will want to see a couple of serving suggestions for this delicious spread, and a couple of modifications that you can try out.  Yum!

The inspiration for this recipe came from a trip to one of my favorite stores: Trader Joe's!  I love trying out healthy spreads, and as much as I love hummus, I was in the mood for something a bit different.

Also, I had a few eggplants from my huge $2 box of produce, and I already used one for my Easy Eggplant Parmesan recipe.  So I was determined to recreate this delicious spread ASAP!

Chicken Pot "Hand" Pies

Last week, I shared my favorite hand pie crust.  I named it the Simple, No-Fail Pie Crust because it is exactly what the title says.  Now, what does the perfect pie crust need?  A filling!

I promised to share a couple of fillings and today I have one of my favorites…  chicken pot pie!  The and pie version is a bit different from your average pot pie because I like to keep it on the less-creamy side so it doesn't explode in your mouth as you are eating it, or even worse in your lunch bag.

The best part of the pot pie filling is that you can practically personalize it with anything you like!  The chicken is a given, but you could use turkey instead or leave it out as a hearty vegetarian pot pie.  As you will see, I actually was out of carrots, but it turned out delicious nonetheless.  At the end of the recipe I will include a few variations that we like to use in our hand pies.  Enjoy!

Football tailgating parties are over, but March Madness has just begun!  I love my game day recipes and snacks, and today's dish is a definite crowd pleaser!  But before we get to the jalapeño poppers, I have a super exciting opportunity for all of you.  Remember all of those commercials last year with Eva Longoria and Michael Symon about Lay's potato chips picking a new flavor of chips?  Well, I'm not sure if you remember this, but the winning chip flavor won $1 million!!!  They are having another contest this year, so if you want the chance to submit your flavor and win big, visit the Do Us A Flavor page.  I will have more details after the recipe too, so stay tuned!

For my flavor, I went with one of my favorite pre-game recipes!  Basically, it's a jalapeño popper (or sweet pepper in my pictures) stuffed with cream cheese and turkey sausage.  It is so delicious!  It is one of my favorite recipes to make and eat because it is always exciting when someone bites into it for the first time and finds all of the different spicy, creamy, and tangy flavors.  Yum!  Hopefully, it can turn into an awesome chip flavor, and this is just what it would look like if I won.  Nice!

Crochet Rewind: Hats, Scarves & Blankets!

Remember how last year I shared the crocheted pouch for my external hard drive and mentioned that it would be my only crochet rewind?  Well, I have a little bit of a surprise for you!  I was thinking about how I have a definite lack of crafts on my blog, compared to the amount of recipes and food posts, so I wanted to share this all with you today!

I started crocheting my freshman year of college and thought it was really fun!  I have given it up in favor of sewing recently, only because I have more than enough warm items to wear, as you can see below, and I do live in California!  However, I realized after meeting Kate of Small & Great, there are so many other items to crochet and I am inspired to take it up again soon!

By the way, these are items that I had on hand to photograph, and you might have seen a couple of these in my Closet Clean-Out post already.  Let's take a peek!

Beanies

I actually have two of these identically ones because I had enough yarn in the skein to make a couple.  Although I only have two here, I actually once made about 80 of them one holiday season for our entire student government staff!  It was ridiculous!

I use these whenever it gets cold inside the house to avoid turning on the heater.  :)

Beret

I decided to experiment with some extra green yarn and make a beret!  I also aded a little button flower, just for a bit of a cute factor.

Easy Eggplant Parmesan (From the Freezer!)

I have been really nervous to post this recipe, because in actuality, it is more of a process and less of a step-by-step, from scratch recipe.  However, it is just too delicious to not share and I'm sure that you will like it!

You may think that this eggplant came from the recent trip to my favorite supermarket.  However, this is actually an eggplant from about a month ago, which I was able to use in this quick recipe using my super easy trick!

So what is my trick?  I freeze the eggplant, but not how you would expect!  It is a complete fluke how I figured it out, but I'm so glad that I did because it makes putting this dish together super quick on the day of.  In fact, it takes less than 10 minutes to whip up the entire dish after pulling the eggplant out of the freezer.  Really!

Favorite Breakfast #6: Veggie Breakfast Sandwich!

You might be thinking, "Really?  Another breakfast post?"  Honestly, I love the feeling of starting my day off right, and the only way to do that is with something healthy and delicious!  This is coming from someone who used to regularly skip breakfast all through high school and college, but times change!

I chose to make this egg sandwich without any breakfast meats just to keep it a bit lighter, but it is still completely satisfying and will keep you nice and full until lunchtime.  Right now, it is my favorite way to start the morning, even more than my other favorite breakfast posts!

Let's get to the recipe!

Favorite Breakfast #5: Easy Green Smoothie!

I have been on a mission to pay attention to my eating habits and continue my gym habit of six days per week, and it has been going strong one month later!

Today, I am sharing my version of a green smoothie that I first saw on Aida Mollenkamp's blog a couple of months ago and was intrigued but didn't immediately try it.  However, when I saw her sipping on it in this post, I was on a mission to try it!

After a few minor tweaks, I am totally hooked on my new morning routine and my guy is actually a huge fan of the smoothies too!

So you might want to know what this tastes like.  It is actually really, really delicious!  Sometimes, I have a hard time finding that happy medium between a wheatgrass shot and a milkshake, but this is just right for me!

I will include a few changes that you can try to increase the greens, the sweetness, or the fullness factor, as well as a few ideas to decrease the calories, if that is what you focus on.

Tip: Blend Green Smoothies without Green Leafy Bits (or an expensive blender!)

Ever since I started trying to eat healthy and promised to share my healthy recipes with you guys, I started making green smoothies!

*Update* Here is the link to my fave green smoothie recipe on this blog!

My sister likes juicing, but I prefer blending smoothies because they actually keep me full without a million trips to the restroom.  I mean, don't even get me started on the reasons why I prefer smoothies, but there was one instance in which juicing was better.  Whenever I made a smoothie with spinach, kale, or other leafy greens, I would always end chewing pieces of leaf while trying to drink my smoothie.  Ew!  I always assumed that because I don't have an expensive blender that I would have to avoid adding greens to my morning smoothie.  Boo!

However, I stumbled upon a tip that I had to share with you about how to blend a smoothie without leafy bits!

By the way, this is the difference between the two blending methods.  Pretty good, right?  Okay, so here is the tip!

Quick Big Game Chili & Our Football Snack Spread!

Disclosure #ad #FamilyMobileSaves #shop #cbias

We love having people over for weekly football parties, but it can definitely be a ton of work and expensive to host everyone!  For this week, I streamlined everything from our shopping to the menu, to make sure that we were spending our time and money wisely.  That meant a late night trip to Smart & Final, so we only had to make one stop for all of our party needs.  For the menu, I needed something quick and hearty, so I bought all of the ingredients for my crowd-pleasing quick big game chili recipe.  Then, we added a bunch of pre-packaged party snacks to complete the spread!

Over the weeks, I have figured out the hits and the misses that our football crowd loves, and I would love to share my tips for putting together a quick game time snack spread with you plus one crowd-pleasing recipe!

Here are just some of supplies that we bought.  All of the Simply Value paper products, tortilla chips, guacamole, fresh veggies, hummus, everything for our chili, and mini waffles for the kids'  chicken & waffle sliders.  After snapping a quick photo, we rounded up the rest of the stuff and were out of there lickety split!  The best part of Smart & Final is that I can buy everything in one store and I can buy both warehouse size & regular size items in one place.  Soooo convenient and budget-friendly!

Right before company comes over, I start the chili and it is a HUGE pot!  Here is my quick chili recipe, so you don't spend the whole day slaving over a hot stove or waiting for the slow cooker.  I use some shortcuts so I can minimize my time chopping veggies.  :)

Last week, I promised that I would share one of my favorite ways to eat my Slow Cooker Ropa Vieja. It is colorful, flavorful, and fun to put together!  In fact, it would be a great dish to serve at a party, with people putting together their "pizzas" with their favorite toppings.  :)  Enjoy!

Slow Cooker Ropa Vieja

For this week's original posts, I wanted to do something different!  I wanted to share some of the creations from my friends and family who have been my creative inspiration.  :)

For today's recipe, I am sharing one that my sister began making some time ago.  We love trying different restaurants, and one of our favorites is a Cuban restaurant that is a bit far away.  So when the craving hits for Ropa Vieja, we were out of luck, until we stumbled upon this recipe!  I love how easy this recipe is, and it is great year round!  Also, I will be sharing my favorite way to serve the Ropa Vieja next week, so stay tuned for that!

P.S. - I Instagram-ed this picture a while back, from another time I made this.  Oh yes, it is so, so delicious.  :)

Handmade Gift Feature & GIVEAWAY with Small and Great!

Today's feature is one of my favorites!  I looove everything that Kate makes for Small and Great.  At Patchwork, we chatted about how math comes in handy in coming up with crochet patterns, which I never knew!  I took my time photographing practically every piece, because they're just so darn cute!  In addition to her adorable crochet creations, she hand-dyes her yarn for hats and scarves.  Totally multi-talented!

And lucky you, Kate is giving you the chance to win one of her cute creations.  I'm super jealous...  You will get the chance to choose your favorite prize, so scroll down to enter the giveaway!

Before that, you should definitely check out my interview with Kate, and not just because she's a wordy gal like me!  I love the inspiration for her shop name, as well as the story of how she started making these amigurumi.  Oh, and find out what amigurumi are!

********************

Tell me a little bit about yourself!

I've been doing arts and crafts my entire life. My father is an artist (oil painting, he's a graphic designer by trade), and my mother has always been a handmade enthusiast (mainly knitting, but when I was growing up she did a lot of quilting and now is into furniture reupholstery, rehabilitating her "roadside treasures"). So as a child I was always around plenty of art supplies. I liked drawing best, but I did everything from painting to pottery. I always took art classes in and outside of school, up through AP art in high school.

I started crocheting only after a long dormant period of creating. I had gone to college thinking I'd major in studio art, and wound up taking not even one class in it (getting a low score in AP art was a major setback for me, and I really regret that I took it so hard!). Instead, I majored in sociology with a focus in media studies. I went on to work as a magazine editor in New York City, and later moved to California to pursue a graduate degree in sociology. Near the end of my graduate career (I made it almost all the way to a PhD and coauthored an academic book along the way), my mom taught me the basic crochet stitches while I was on a trip home back east in spring of 2011. It had always bothered me that I had never gotten the hang of knitting -- my mom is a great knitter, and her mother, whom I was very close to, was an amazing knitter -- but crochet came miraculously easily. Before that weekend was out, I'd taught myself granny squares, and within weeks I'd made an afghan!

I found lots of inspiration and kindred spirits on Ravelry.com -- I had no idea so many people were into crochet, and that there were so many things you could do with it. My first amigurumi (Japanese for, more or less, soft knitted toy) was a very simple owl made for my husband, but after that, I took off. Between books and the internet, I taught myself all kinds of crochet techniques (Tunisian crochet, tapestry crochet, intarsia), and I soon started designing my own patterns for amigurumi.

Making amigurumi really turned a corner for me -- it reawakened this part of me that had been dormant for years. For the first time since high school, I find myself drawing all the time, and my patterns are born from these sketches. (I've also had to relearn some basic math and geometry that my high school self thought I'd never need to know later!) I was crocheting every day, and creating new things all the time, and pretty soon my friends' and families' homes (not to mention my apartment) were overflowing with the stuff.

When people I made things for would show my crochet to their friends (in particular, new moms -- I'm at the age where I make a lot of people baby gifts), they'd inevitably ask, "Is she on Etsy?" I only had a fuzzy awareness of Etsy at the time. But by last winter, disillusioned with academia and starting a new 9-to-5 job (I work for an internet startup), I started looking into it more seriously. I bought every book I could find on starting a handmade business, and on Groundhog Day (see, more animals!) Small and Great Crochet was born. It's funny, because it often feels to me that this is the last thing I would have wound up doing, but people who've known me the longest always say it absolutely makes sense.

Tangy Spiced Brisket

In my quest to FINALLY share all of my holiday recipes from this past spring, I am at the last one!  The great thing is that it is perfect timing for you to add to your Thanksgiving menu!  This is the last recipe I'll be sharing before Thanksgiving, because I'll be scurrying around the kitchen after work to cook up a storm.  :)  Let the festivities begin!

I just wish I had more pictures because I did not originally intend to post this.  This will be due for an update soon!

Mixed Berry Cobbler from Ellie Krieger

Not to be punny or anything, but here is another short and sweet recipe.  Short because it's in a shallow pan and sweet because it's a yummy dessert! This is definitely one of my favorite recipes that I make at home on a regular basis.  Usually, I make this in individual ramekins (the ones I used in this and this recipe), but for company I make it in a large casserole dish.

For anyone who is not familiar with Ellie Krieger, she had a show on the Food Network  called "Healthy Appetite with Ellie Krieger."  I totally love her approach to cooking and health, and I even bought a couple of her recent cookbooks!

Back to this recipe: It is super simple and the ingredients can be kept in your pantry and freezer year round (even the buttermilk) so you can make this really quickly without a trip to the store!  I don't have a step-by-step for you this time because the directions are so easy.  Taste-wise, it is a crowd pleaser!  I had reservations about serving a fruit-based, healthy desserts to my family, but they loved it.  The berry filling is juicy, slightly tart yet sweet, and almost creamy, which contrasts with the fluffy topping.  The topping is almost like a sweet buttermilk pancake, dusted with sugar, which is caramelized in spots.  Mmmm!  Read below for the full recipe!

Golden Sweet Corn Bread Mini Muffins

I am a corn bread snob.  If I have the option to order corn bread at a restaurant, I never choose it save for one exception.  Now, you might think that it means I have lukewarm feelings towards corn bread if I never have it, but definitely not!  If you hand me a perfectly sweet, golden, slightly toasted piece of corn bread, I will devour it in a flash.  There's a reason that my favorite stuffing is corn bread and sausage stuffing!

Years ago, when I went searching for corn bread recipes, I made sure to look for a recipe that was sweet and moist.  There's nothing worse than taking a bite out of a piece of cornbread and finding out that it is bland and crumbly.  Also, I like a bit of golden color instead of a pale, sad looking bread.  I found a recipe and made a couple of tweaks including adding whole corn kernels and turning the large loaf into mini muffins!  The result is a sweet little corn bread muffin that my entire family loves.  I hope you enjoy it too!
