Carrot and Jicama Salad with Lime Vinaigrette

A couple of weeks ago, I shared the delicious recipe that we had for my birthday dinner, the Grilled Tilapia with Spicy Mango Salsa.  I promised to give you the recipe for the Carrot and Jicama Salad as well, and here it is!

It is super fresh and light, colorful, and a good side dish for almost heavy item.  Besides, it stays crisp even when dressed, so it is a great make-ahead salad.  Nice!  Also, everyone will think it is extremely fancy and hard to make, but with just a couple of ingredients, you will know better.  :)

Apple Summer Salad on Diane's Vintage Zest!


Living in sunny South-Africa we have great weather just about year round - with the exception of a few weeks of low temperatures during Winter {which just started on June 1st}.  That being said, we do a lot of outdoor cooking, no matter the weather, hence me sharing a delicious Apple Summer Salad with you.  We enjoy this salad not only with grilled meats, but as a side salad to many pasta dishes as well.  Pasta dishes are normally filling enough to be served on its own, but I do like to add a small side salad bowl to the meals as well.  Something refreshing and crunchy is always welcome with a saucy pasta.  However you decide to serve this salad, I do hope you enjoy this as much as my family does.

Simple Caprese Salad

The end of summer is always a sad time for me.  The long, hot days are wonderful in California, and the weather is perfect for my mother's garden (which you might remember from this post).  She always gives me a large tomato bumper crop from her many tomato plants, as well as a ton of basil.

Earlier this summer, I tried a roasted tomato soup (which I have yet to blog about!) which was pretty good.  I also had a couple of recipes which used some of the crop, including the Basil, Rosemary and Tomato Focaccia and the "Pantry Fresh" Pesto Pasta Salad.

I love coming up with new recipes to use my abundant tomato stock.  However, none of these dishes really let the fresh tomatoes sing on their own.  That is why my absolute favorite summertime tomato dish is a simple Caprese Salad!

A few months ago, I shared with you my favorite salad.  I should probably clarify that the recipe I posted about is definitely my favorite lettuce-based salad.  The caprese salad is absolutely my favorite salad, bar none!

Unfortunately, I am feeling a bit under the weather today.  :(

Maybe it's a culmination of my travel, eating out so much this last week, or staying out in the sun too long for Mother's Day.  In any case, I had to skip the gym today, which is always a bit worrying.  It's so easy to put off the next workout for tomorrow, or the day after, and so on...

Well, at least I can eat right!

I put together one of my favorite salads ever, which I eat every day, as long as I've been a good grocery shopper and food prep-er.  Yes, I think I just made up a word.
