Recently, we had a good old-fashioned movie night at home with Minions, and I baked up some adorable whoopie pies to go along with it!  This recipe is kid-friendly, so everyone can enjoy baking and decorating them.  :)

The cookies in the whoopie pie are a luscious lemon flavor, with bits of lemon zest throughout.  The filling is a light and airy blueberry and lemon zest whipped cream cheese frosting.  You know that cream cheese frosting is my favorite kind, so I had to include it!  I used blue food coloring in the filling because I thought it would look like their little pants.  Right?  :)

Lastly, I think the Minions Whoopie Pies look adorable!  It's so much fun decorating them by choosing one or two eyeballs, deciding on if they'll smile or look shocked, and designing their goggle straps as well.  :)

I must admit that I'm one of those adults who loves cartoons and sometimes borrows nieces and nephews just to have a reason to see the movie in theaters.  Actually, I was bummed that after seeing both Despicable Me and Despicable Me 2 with the little ones, I missed out on Minions in theaters.  That's why when the movie came out on 12/8/15 on DVD, I rushed to Target to buy it!  I bought the Target-Exclusive Deluxe Minions Metalpak Blu-ray/DVD, which has 40 minutes of extra content.  The DVD case was just too cute not to buy!  There was also an exclusive $5 Target gift card deal upon purchase, so it was a total no-brainer.  :)  Besides, I was able to pick up all of the ingredients from my shopping list.  Easy peasy!

Minions Whoopie Pies
Adapted from this recipe




Ingredients
For the cookies:
  • 1 1/2 cups Market Pantry unbleached all-purpose flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 6 Tbsp. (3/4 stick) unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 1 tsp. finely grated lemon zest
  • 1 large egg
  • 1 Tbsp. fresh lemon juice (about 1/2 lemon)
  • 1 tsp. vanilla extract
  • 1/2 cup buttermilk, any fat content
  • 20 drops Yellow food coloring

For the blueberry lemon zest cream cheese filling:
  • 1/2 tsp. vanilla extract
  • 8 ounces blueberry & lemon zest cream cheese, at room temperature
  • 1 1/2 cups Market Pantry powdered sugar
  • 15 drops Blue food coloring

For the minions:
  • 10 regular-sized Market Pantry marshmallows
  • 10 regular-sized brown chocolate candies
  • 20 mini brown chocolate candies
  • Few pieces of Fiber cereal

Directions

1. Preheat the oven to 350º with a rack positioned in the middle of the oven.

2.  Sift the flour, baking powder, baking soda, and salt into a medium bowl and set aside.

3.  Beat the butter, sugar, and lemon zest on medium speed until smoothly blended, about 1 minute.  Scrape the sides of the bowl, as needed.

4.  Add the egg, lemon juice, and vanilla.  Mix until blended, about 1 minute.

5.  Add half of the flour mixture, on low speed.  Mixing until just incorporated.

6.  Add the buttermilk and mix.

7.  Add in the remaining flour mixture and mix until just incorporated and the batter looks smooth.

8.  Add yellow food coloring to your desired color.  I used 20 drops!

9.  Line 2 baking sheets with parchment paper and butter the paper.

10.  Drop heaping tablespoons of dough onto the prepared baking sheets, spaced at least 3 inches apart.  (Follow this! I didn't and mine stuck together.)

11.  Bake the cookies one sheet at a time until a toothpick inserted in the center comes out clean, the tops feel firm, and there is a thin line of brown at the edges of the cookies, approximately 10 minutes.

12.  Cool the cookies on the baking sheets for 10 minutes, then transfer them to a wire rack to cool completely.

13.  For the filling: On low speed, beat the vanilla and cream cheese until thoroughly blended and smooth, about 1 minute.

14.  Add the powdered sugar and mix until smooth, about 1 minute.

15.  Add the food coloring until desired color and beat until smooth.  I used 15 drops.

16.  Pair the cookies up to find ones that match.  Turn one cookie over from each pair and pipe or spread a few tablespoons of the filling on each one.

17.  Make the minion tops of each whoopie pie by cutting each marshmallow in half.  Add one or two of the halves, depending on how many "eyeballs" you want.  (It'll stick to the cookie because the inside of the marshmallow is naturally sticky!)

18.  To make adding the pupil step easier, either soften the marshmallows by heating very slightly (too much and you get runny eyeball syndrome), then press in a mini chocolate candy into each eyeball.  Alternatively, you can use reserved frosting or another heated up marshmallow as "glue," which is what I did for the remaining minions.

Note: In my opinion, the regular size chocolate candies are just a bit too large, as you can see on the runny example on the right.

19.  Add a regular chocolate candy or a piece of fiber cereal for the mouth.  Then add pieces of cereal next to the eyeballs for the goggle straps.

20.  Gently press the top cookie onto the matching bottom.

21.  Refrigerate for at least 1 hour until firm.

And that's it!  I made 10 whoopie pies from my recipe, but it depends on the amount you scoop on to each cookie.  The original recipe says that the whoopie pies can be stored for up to 4 days, but they didn't last that long around here!
