Happy Monday!  I hope you all had a great Thanksgiving weekend, and now that it's all done... it's time to cook more!  Just kidding.  :)

Honestly though, between my friends, my family, and my man's friends & family, we have so many holiday celebrations this month.  Since I am the resident baker, I came up with the recipe for these delicious M&M'S® Chocolate Oatmeal Pies baked in Mason jars, just in time for the holidays!

First of all, if you have ever had an oatmeal pie, this is a chocolatey delicious twist on the traditional variety.  If you have never tried one, well let me take a minute to describe it to you.  There is no top crust to the pie, but the mix of oatmeal and coconut turns crunchy and golden delicious.  It is almost like biting into a chewy macaroon!

Inside, the M&M'S®, maple syrup, and coconut swirl together and you feel like you are eating a rich caramel or dulce de leche, with a hint of chocolate.  Basically, it is one of those desserts that have people rolling their eyes in the back of their heads with the first bite.  :)

Not only is it delicious, it is ridiculously quick and simple.  You don't have to be a professional baker to make it, at all!  This is one of those recipes that is so kid-friendly, even my eleven-year-old niece can whip this up on her own.  This year, I might have her "teach" the five-year-old how to bake it.  I'm imagining the tiny aprons right now... :D

To reiterate, this recipe super simple: it requires one bowl, no fancy equipment, and it takes only a matter of minutes to prep before throwing it in the oven.  Also, I make it even quicker by using a store-bought crust, because the hero here is the filling.  I think I could line the pie tin with sardines and people would still eat it!

Okay, so I have covered the fact that this is delicious (check) and you can see that it is gorgeous (check).  Not so convinced that it is as easy as I say?  I have step-by-step recipe photos below!

Lastly, I would say that the hardest part of the recipe is buying the ingredients (as I sometimes do), but this time at my local Target, it was super simple!  They even had special baking center display that stocked just about all of my holiday baking ingredients.  So after your one-stop-shopping trip at Target, you'll be ready to whip this up in no time!

Make sure to buy the Quaker® Oats, old fashioned variety, because it stands up much better to the long baking time.  Lastly, the M&M'S® Holiday Baking Minis make this just a bit more festive with the red and green, don't you think?  I found mine in the seasonal aisle along with the food gifts and candy canes.

Turkey Pot Pie from Kreativ77!

For today's guest post, I am welcoming the gals from KREATIV77.  Both Alix and Chelsea post on their amazingly creative blog, with everything from recipes to creative DIYs and family life.  Check them out!

Today's recipe is a Turkey Pot Pie KNOW how much I love pot pie!  Remember the Chicken Pot Hand Pies I made?  Well, this recipe from Chelsea is so good that it converted her from on-the-fence to a pot pie lover.  Besides, it just looks so darn good.  Let's get to it!

I'm not a huge fan of pot pie.  In fact, it would be pretty safe to say I dislike it immensely.  Maybe because the pot pies I've had in the past, either homemade or store bought, seem to be made up of crust, gravy and a few pieces of chicken and veggies....which always seem to be the same size.  They've mostly been gray in color and almost no taste to them. There's something not right about that to me. So I just don't eat it.

However, I have found the most delicious pot pie ever made in the entire world.  No joke.


Turkey Pot Pie on Diane's Vintage Zest!


My friend Emily (who is a super good cook and my favorite person ever, she's one of the coolest people I know) whipped up this recipe with whatever sounded good to her.  No exact measurements- the vegetables aren't uniformly cut and it has the perfect amount of "gravy" to hold it all together without being so overwhelming.  And it has turkey instead of chicken which I believe makes all the difference.

I call it the Preferred Pot Pie...but Emily and I came up with several names: Lousiana Pot Pie, Turkey Mushroom Pot Pie, Stuff Your Face Full of Heaven Pot Pie....etc.

 

It's pretty easy to make too:

Chicken Pot "Hand" Pies

Last week, I shared my favorite hand pie crust.  I named it the Simple, No-Fail Pie Crust because it is exactly what the title says.  Now, what does the perfect pie crust need?  A filling!

I promised to share a couple of fillings and today I have one of my favorites…  chicken pot pie!  The and pie version is a bit different from your average pot pie because I like to keep it on the less-creamy side so it doesn't explode in your mouth as you are eating it, or even worse in your lunch bag.




The best part of the pot pie filling is that you can practically personalize it with anything you like!  The chicken is a given, but you could use turkey instead or leave it out as a hearty vegetarian pot pie.  As you will see, I actually was out of carrots, but it turned out delicious nonetheless.  At the end of the recipe I will include a few variations that we like to use in our hand pies.  Enjoy!
